My go-to bait for big shallow water stripers is the DOA CAL 4″ Shad Tail in pearl. Attach to a DOA Premium Jig Head. 
The results speak for themselves.

Probably June would be the safest bet. The weather will have stabilized from springtime fronts and a variety of species will be available. Hope you can make it.
